Easy No Bake Chocolate Eclair Dessert

This Easy No-Bake Chocolate Eclair Dessert is one of the easiest and most scrumptious desserts that I have in my repertoire of frugal recipes.  This crowd pleasing dessert needs no oven…just patience.

It’s super easy and fast to put together, but it does require time to set up.  It’s best if you can make it the day before, but my suggestion is to make it the night before and then go to bed.  That way you’re not thinking about it! Lol!

Let’s make this delicious Chocolate eclair dessert!

Basic ingredients are all you need for my Chocolate Eclair dessert.  Milk, graham crackers, butter, whipped topping, vanilla pudding, cocoa powder and powdered sugar.

Begin by making the instant pudding, according to the directions on the box and once it’s ready, fold the tub of whipped topping into the pudding and blend it well.

Next, lay the graham crackers into your baking dish.  You will have to break a few (as pictured above) to make a solid layer.

Pour half of the pudding mixture over the crackers and repeat another layer of crackers.

Top second layer of pudding with one more layer of crackers. Little tip:  Make sure, on the third layer, that the graham crackers are bumpy side down.  This makes for an easier spread of the chocolate.

The chocolate frosting is super easy to make.  All you need is butter, milk, cocoa powder and powdered sugar.  Once it’s blended together, it will be rather thin for frosting, but don’t worry.  It spreads easily and will firm up, once refrigerated.

Pour it over the top layer of crackers (as shown above) and gently spread to the edges with a butter knife.

As you can see, it’s a smooth, even consistency.  The small lumps that you see are powdered sugar.  I blended mine by hand.  If you rather not see the lumps, you can certainly use a mixer, but the lumps don’t affect the dessert, at all.

After waiting for the heavenly dessert to set up, now it’s time to dig in to a refreshing, eyes-rolling-in-the-back-of-your-head delicious-ness that will have you going back for seconds!

This dessert is a must for holidays, potlucks or just about any occasion.  If you’re having a crowd over, I suggest making two!

Tips:

If you want to shave some calories off, you can use skim or low fat milk in the pudding, use low fat or fat free whipped topping and reduced fat graham crackers.  None of these lower fat options will effect the taste of the dessert, at all.

Chocolate Eclair dessert is not only quick and easy to make, but is super delicious, to boot! This is a total crowd pleaser that is family favorite! This awesome dessert features graham crackers, fluffy vanilla pudding and a delightful chocolate frosting. Make it the day before so the dessert has time to set and the flavors can meld into a treat for your tastebuds!
Ingredients
  • 2 (3.4oz) packages instant vanilla pudding
  • 3½ cups milk
  • 12 oz. whipped topping
  • 1 (14.4 oz.) box graham crackers
  • Frosting:
  • 6 Tbsp butter
  • 6 Tbsp milk
  • 2 cups powdered sugar
  • 6 Tbsp cocoa powder
Instructions
  1. Blend vanilla pudding and milk for about 2 minutes. (I put the mixture in a bowl with a sealable lid and shake.
  2. Fold in the whipped topping and blend well.
  3. Using a 13x9 casserole dish, put the first layer of graham crackers on the bottom. (You may need to break a few to fit and completely cover the bottom.)
  4. Pour half of the pudding mixture onto the crackers and spread evenly.
  5. Put another layer of crackers on top of the pudding and layer the same as the first layer.
  6. Pour the rest of the pudding mixture on top of this layer.
  7. Put the final layer of crackers on top of the pudding with the bumpy side down for easier spreading of the frosting.
  8. Frosting: Combine the butter and milk and warm in the microwave enough that they are melted together. DO NOT BOIL.
  9. Add the cocoa powder and powdered sugar and blend well. Either use a fork or a mixer.
  10. Pour over top of graham crackers and smooth out the frosting all the way to the edges.
  11. Note: Frosting will be thinner than a normal frosting.
  12. Refrigerate overnight then ENJOY!!
