Quick & Easy Cake Mix Cookies Recipe

Cake mix cookies are one of the easiest and delicious dessert recipes I’ve ever made.  When my kiddos were much younger,  I use to channel my inner June Cleaver and make these easy Cake Mix Cookies at least a couple times a week.  I would make a batch right before they would get out of school, so they would have warm cookies when they got home.

These cookies were great when I needed a quick dessert for holiday parties, snacks for lunches, or whatever the need may be AND you don’t need a lot of ingredients.  There’s three basic ingredients…the cake mix, eggs and oil…and then you can add other additional ingredients from there.  This recipe is so versatile and the combinations are limitless!

Let’s Make Them!

Quick & Easy Cake Mix Cookies

This recipe just takes basic ingredients that you most probably already have on hand.  Most grocery stores put the cake mixes on sale for under a dollar and that’s when I stock up!!  Therefore, making these cookies an extremely frugal dessert that your family will love!

Mix all ingredients in a large mixing bowl.

Scoop out a teaspoon of mix and roll it into a ball.  Place it on the cookie sheet.

Slightly flatten each ball with the tip of your finger.

The above pic shows what they look like before and after they are flattened.  Bake each batch on 350 for 10-12 minutes, but be sure to keep an eye on them so they don’t burn because every oven is different.

You don’t have to flatten each ball, but I put the above pic in to show you that when you do, it makes for a larger cookie.

This recipe makes a delicious, soft cookie that your family will love!  And I promise you…they won’t last long!

Cake Mixes and Possible Combinations:

Here are some awesome variations you can try using different cake mixes and ingredients:

Yellow cake mix – chocolate chips, pecans, peanut butter, white chocolate chips, oatmeal, raisins, Snickers candy bar (chopped), Butterfinger candy bar (chopped), roll in cinnamon & sugar (for Snickerdoodles), Hershey kisses.

Chocolate cake mix –  chocolate chips, nuts, Snickers candy bar (chopped), Andi’s chocolate mints, peanut butter cups, M&M’s.

Spice cake mix – chocolate chips, cinnamon chips, M&M’s.

Lemon cake mix – plain and either rolled in powdered sugar or sprinkle it on top when theyre still hot.

Red Velvet cake mix – white chocolate chips, red & green M&M’s, crushed peppermint candies.

Strawberry cake mix – coconut.

Butter Pecan cake mix – pecans, chocolate chips.

These are just a few combinations that I have tried and I’ve also played around with different flavorings, such as mint, maple and almond and I have never made one that we didn’t like.

Super simple and cake mix cookies are soft, chewy and delicious! The combinations are endless!
Ingredients
  • 1 (18.25 oz) box of cake mix
  • ½ cup oil (I use Canola)
  • 2 eggs
  • 1 tsp vanilla (optional)
  • ½ cup of your choice of extra ingredient (chocolate chips, nuts, etc)
Instructions
  1. Heat oven to 350 degrees
  2. Combine cake mix, oil and eggs in a large mixing bowl.
  3. Add extra ingredient(s) and mix.
  4. Drop by teaspoon onto lightly greased cookie sheet.
  5. Bake at 350 for 10-12 minutes. Watch first batch closely until you know how fast your oven will cook them.
  6. Remove from oven and let cook a couple of minutes before removing them from cookie sheet.
  7. Enjoy!
