Creamy Cucumber Salad With Ranch Dressing

Creamy cucumber salad with ranch dressing is one of those recipes that almost seem too easy to be good, but that’s not even close to true!

This is a great recipe for kids, picky eaters or just for those that enjoy the goodness of America’s favorite salad dressing! 

Creamy cucumber salad with ranch dressing uses only 3 ingredients and takes about 5 minutes to put together. That’s a big win in my book!

This recipe is so easy that I’m almost embarrassed to make a post out of it, but I’ve only recently discovered it, so I figured that if it was new to me, there may be others that haven’t tried it, as well.

Now, before you take issue with the fat content or calories of Ranch dressing, there are ways to cut back on both.  In my recipe below, I used regular Buttermilk Ranch, but you can easily substitute low fat or fat free ranch without tasting very much of a difference.  You can also cut back on the amount of dressing used.  One cup may be too much for some and just right for others, so experiment to see what works best for you.  Maybe start with a half cup and if it isn’t creamy enough, add a little more.  It’s all personal preference.

All you will need are 3 cucumbers, a small onion and a bottle of ranch dressing.

I prefer to peel my cucumbers because regular cucumber skins can sometimes be tough, but if you prefer English cucumbers, you can definitely leave the skins on.

I then cut each one in half and slice them thin.  Again, this is personal preference because there’s no right or wrong way to slice a cucumber…at least not in my opinion.

While you’re at it, slice (or chop) you’re onion.  I do it both ways.  Again…personal preference.

The last step is to add the dressing, toss, add a few shakes of pepper and that’s it!

It really doesn’t get any easier than this and this salad goes so well as a side dish with just about everything! It’s light, creamy & delicious and is a great summertime salad that is perfect for backyard bbq’s, potlucks, company or a super quick salad for those busy weeknights!

TIP #1

The first time I made this salad, I took a suggestion to soak my cucumbers (after I had sliced them) in water with about a tsp. of salt for one to two hours.  This is supposed to help them maintain their crispness, but you need to drain them well & pat them dry before mixing with the dressing or your salad may become watery.

TIP #2

I have also made this creamy cucumber salad with ranch dressing without soaking them and the salad was still crisp. It may have something to do with the age/freshness of the cucumber. My suggestion is to peel your cucumbers, sprinkle with a little salt and let them sit in the colander for about 30 minutes before combining the dressing to give some of the water a chance to drain out.  

TIP #3

If you like the taste of dill, try adding about 1 tsp of dried dill to your recipe.

This is a delicious, light salad that combines fresh cucumbers, onion and a creamy ranch dressing with hardly any prep work! No need for a bunch of ingredients. Store bought ranch already has everything combined. Your family and friends will definitely want more!
Ingredients
  • 2 - 3 Cucumbers
  • ¼ - ½ Red onion sliced thin
  • ½ - -1Cup Ranch dressing of your choice...regular or fat free
  • Pepper
Instructions
  1. Peel & slice your cucumbers. You can leave the skins on if you prefer.
  2. Thinly slice your onion. You can also use a small sweet onion if you prefer.
  3. Add the Ranch dressing and toss. If you want to cut the calories, opt for a fat free dressing.
  4. Add a couple of sprinkles of pepper and refridgerate until ready to eat!

  1. I don’t like cooked spinach so I wonder if there another vegetable I can use in its place? This is one of the easiest low carb recipes I have seen. I’m single and don’t like cooking just for me, especially after a long work day. This seems so quick & easy that I can see making it even during the week.
