Pork Chops and Scalloped Potatoes

Pork chops and scalloped potatoes has become one of my favorite go-to meals, lately.  I got the recipe from an old friend that I’ve recently reconnected with.  She found out that I had a frugal living blog and featured frugal recipes that will feed a crew!  Well, she was so sweet to send me this recipe and told me to give it a try, which is exactly what I did! 

I try and share with my readers, recipes that are simple to cook, take basic ingredients that you would most likely have on hand, recipes that you can get on the table in a relatively short amount of time AND they have to taste good!!

Well, let me tell you…I’m so glad she shared this recipe with me because this one got check marks all the way down the list!

I think pork chops and scalloped potatoes are so good that you could serve this for any special occasion, holiday or Sunday dinner and it would even be a great meal when you have dinner guests!

It’s a combination of creamy potatoes and lightly fried pork chops in a casserole and as you see from the pic below, the ingredients are ones that you most likely have on hand.  This means that you can pretty much throw this recipe together quickly and have it in the oven in less than 30 minutes.

The creamy sauce

I started off with the creamy sauce.  In a saucepan, melt 1 tablespoon of butter on low to medium heat and then add the salt, pepper and flour, stirring to blend. Next, you’re going to add the chicken broth.  Make sure to keep on stirring to avoiding lumping.  Bring the sauce to a boil and then turn the heat off and set aside.

Peel and slice under 1/4″ thick 6-8 medium sized potatoes. If you have a mandoline vegetable slicer, this will be super easy, but you can also do it the old fashion way with a sharp knife.
You can put them in cold water until ready to use to prevent browning, and rinse off excess starch. 
This step can be done several hours ahead of time and potatoes refrigerated in water, until ready to use.  This can really speed the prep time up.  
When you get ready to put them in the casserole dish, make sure to dry them off very well.

Season the pork chops with what ever you prefer to season them with.  I use a little salt, pepper and garlic powder, then lightly dredge them in flour and brown them on both sides in a Skillet in 1-2 Tbsp. of butter.

Grease a casserole dish with the remaining Tbsp of butter and layer the potatoes on the bottom.  Pour the sauce mixture over the potatoes and put the browned pork chops on top.

Sprinkle paprika on top, cover with foil and bake in a preheated 350 degree oven for an hour.

After an hour, remove the foil and bake for another 15 minutes.  Check the potatoes to see if they are tender and if they’re still a little firm, bake for another 10-15 minutes.

I have to tell you that these are the most tender, melt in your mouth pork chops you’ll ever taste!  When you’re craving a homestyle meal, this one will definitely hit the spot!

You can serve pork chops and scalloped potatoes with just about any vegetable to make a complete dinner!

Ingredients

  • 3 Tbsp butter divided
  • 1 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 3 Tbsp flour all purpose
  • 1 14.5 oz can chicken broth
  • 6 Pork chops I used the bone-in but you can use boneless, as well.
  • 6 Cups thinly sliced potatoes
  • 1 Dash paprika

Instructions

  • Preheat oven to 350 degrees
  • In a sauce pan, melt 1 Tbsp of butter over medium heat. Add salt, pepper and the flour.
  • Pour in the chicken broth, cook & stir until mixture boils. Remove from heat and set aside.
  • In a skillet, dredge pork chops in flour and brown in 1Tbsp of butter.
  • Grease a cooking dish with the remaining Tbsp of butter and layer the potatoes on the bottom.
  • Pour the sauce mixture of the potatoes and place the browned pork chops on top.
  • Sprinkle paprika on top and then cover and bake for 1 hour.
  • Uncover and bake for an additional 15-30 minutes. Check potatoes after 15 to see if they're tender.
