Easy Avocado Tomato Salad Recipe

Avocado tomato salad is delicious and so easy to make! It’s a perfect salad to have for a special dinner, a potluck or a backyard bbq. My family especially loves this salad in the summer months because it is so light and tastes super fresh.

My Mom started making this simple avocado tomato salad when I was very young.  It has been a staple in my menu rotation my whole married life!  My husband, kids and grand babies LOVE it!  Sometimes it’s a race to the salad bowl at dinnertime.  Everyone is afraid they won’t get their fair share! lol.

When we have company over for dinner, I usually always make it and afterwards, I’m always asked for the recipe.  I have to chuckle, because this salad is so simple to make.  I’m not going to say it’s cheap, because sometimes, avocados can be little pricey…at least here, in Texas.  But, depending on how many people you have to feed, it’s still not a super expensive salad.  If you have tomatos in your garden, that makes it even better!

It packs a punch of flavor and it can be a very healthy addition to your lunch or dinner. This is one of my family’s favorite recipes.

Easy Avocado Tomato Salad

Ingredients:

1     Med. to Large Tomato (diced)

2-3 Large avocados (diced) or 5-6 small/regular

1/2 Med. red onion (sliced). I have used white and yellow as well.

1/4 Cup vinegar

1/4 Cup canola oil

Salt and pepper to taste.

Let’s Make It!

Place your diced and sliced avocados, tomato and onion in salad bowl.

Put 1/4 cup of vinegar and 1/4 cup of canola oil in a small bowl or measuring cup and mix with a fork or whisk until well blended.

Pour over salad and toss.  Add salt and pepper to taste, then refrigerate.  That’s it!  It’s so easy make and people pleasing to boot!

tips for making this delicious avocado tomato salad:

  • Make a couple hours before serving to allow the flavors to fully develop.
  • Put an avocado seed in the salad to keep the avocados their pretty green color.  Remove before you serve.  Not sure if this is an old wives tale or not, but I was told to do this by my mother and it’s always seemed to work.  I think the vinegar, in this recipe, also helps in this process, but why take a chance.
  • This salad is versatile.  You can substitute cucumbers for the avocados for a fantastic cucumber tomato salad for a delicious variation.

Ingredients

    1. This salad is versatile. I’m sure there’s a lot of tweaking that can be done. I’ll have to try some cilantro in it next time! 🙂
