Cheesy Chicken Spinach Frito Bake

This recipe was given to me by my friend and neighbor.  She brought this dish to a neighborhood get together, one evening and it was so good that I requested the recipe from her.  Cheesy Chicken Spinach Frito Bake isn’t too pretty, but boy is it good!  I’m a big fan of spinach dip and this recipe reminds me of that.  There’s so many delicious flavors between the saltiness of the Fritos, the cheese, the creamy soups and a little kick from the jalapeños.  My family loved this one!

Let’s Make It!

Melt 2 Tbsp of butter and saute the chopped green onion tops until softened.

Add the spinach, soups, sour cream, chilis & chicken to the onions and mix.

Put the crushed Fritos in a casserole.

Pour soup mixture over the Fritos.

Top with the cheese and jalapeños and bake at 350 degrees for about 30-40 minutes, keeping an eye on it to make sure it doesn’t burn.

Cheesy Chicken Spinach Frito Bake

Simple and family pleasing, this recipe can be thrown together quickly. If you like spinach dip, you'll really like this!

Ingredients

  • 4-6 cups cooked chicken Shredded or diced
  • 2 cups Monterrey Jack cheese
  • 8 oz. cooked drained chopped spinach
  • 1 can cream of mushroom soup
  • 1 can cream. of chicken soup
  • 1 16 oz. sour cream
  • 1 cup green onion tops chopped
  • 1 can chopped green chilis
  • 1 regular size bag of Fritos crushed
  • 2 Tbsp. butter
  • Jalepenos to taste on top I used Mt. Olive jalapeño slices

Instructions

  • Preheat oven to 350 degrees. Lightly spray a 13x9 inch pan with cooking spray.
  • Melt butter and saute onions.
  • Add spinach, soups, sour cream, chilis & chicken and mix well.
  • Crush the the entire bag of Fritos.
  • Layer ingredients in a 13x9 casserole starting with the Fritos, the soup sauce and then the cheese.
  • Top with the jalapeño slices.
  • Bake for 40 minutes.
