Easy Macaroni Chicken Casserole Recipe

If you’re looking for a quick, easy, delicious, kid pleasing recipe, here ya go!  Easy Macaroni Chicken Casserole has been a family favorite of ours for many years.

This recipe can be easily modified to a healthier version and is still very rich, creamy and delicious.  It’s comfort food, at it finest.  I’m mean, after all…what’s not to love?  All you need is to pick a veggie for your side and BOOM!  Dinner is served!

Sometimes, I prepare mine in the morning, cover it and put it in the fridge.  You can also prepare it the day before.  I do this when I know I’m going to busy the next day.  Just take it out, straight from the fridge to the oven and in an hour or less, dinner will be on the table.

Let’s make it!

First thing I do is boil 2-3 frozen chicken breast in a pot on the stove.  I add a little onion (or onion flakes), 1 tsp. salt and a couple shakes of garlic powder.  Cook them until done, then remove from water and chop or shred the chicken breast.

You can also use canned chicken breast.  1-2 large cans work great if you’re in a real hurry.  Rotisserie chicken would also work, as well.

Cook your macaroni according to directions, but don’t overcook.  You don’t want them to be mushy, so go for al dente.

Once the noodles are done, drain them, combine all of the ingredients and mix well.

The cheese is mixed in with the other ingredients, but if you and you family are fond of cheese like mine is, you can always add a little extra to the top.  I also add salt and pepper to taste, on top.

Cover with foil and bake in a preheated 350 degree oven for 35-45 minutes.  Remove the foil and bake an additional 10-15 minutes.

Cheesy Deliciousness!!

Serve immediately.

As you can see from the above pic, you’ll have a thick creamy spoonful of deliciousness.

All you’ll need to add is a salad or what ever favorite vegetable you want.  If you’re lucky enough to have left overs, it’s great the next day.

Ingredients
  • 2 cups cooked macaroni
  • 2 cups coarsely chopped or shredded chicken breast
  • 2 cups (cans) Cream of mushroom soup (undiluted)
  • 2 cups milk (I used skim milk)
  • 2 cups of cheddar or colby jack cheese
  • Salt & pepper
Instructions
  1. Preheat oven to 350 degrees.
  2. In an 13x9 casserole, combine all of the ingredients and mix well.
  3. Cover the casserole with foil and bake for 35-45 minutes.
  4. Remove cover and bake for 10-15 more minutes.
  5. Serve immediately.

TIP– This was an old weight watchers recipe.  If you want to make the healthier version, use skim milk and a low-fat or fat-free cheese.
